Barons 9s On the heels of yet another food recall, I think it time for someone in the USDA and/or EPA and/or FDA to come clean about how organisms like Salmonella and E. Coli get transferred from the digestive tracts of animals, to fresh produce. The broad answers to the problem include wild animals, unsanitary packing by humans, water contamination, and exposure to contaminated manure. The narrower answer I looking for is how then, do the very dangerous antibiotic resistant strains like Salmonella Saintpaul get into our peppers, lettuce, spinach, sprouts, and other crops? These "superbugs" emanate from animals that have been fed sub therapeutic levels of antibiotics for prolonged periods of time so we can probably rule out wild animals and migrant workers, at least as an original source. The broad solution to the problem seems to be eat sprouts, peppers, tomatoes, lettuce, or spinach. Unfortunately, even as we are urged to eat more fresh fruits and vegetables, that seems to be becoming a riskier proposition. More unfortunately yet, by the time the public is aware of these recalls, people have usually gotten sick. I did a little snooping around online last year about the origins of the Salmonella tainted serrano peppers. I found out that they were grown Nuevo Leon, Mexico a town with numerous poultry production facilities. The source of the "superbug" contaminating the peppers was eventually tracked down to the water supply. Lest you are tempted to blame Mexico lax farming regulations, the same resistant bug was found in the alfalfa sprout seeds that were recalled earlier this year in the US. These came from Omaha, NE. Water runoff from a contaminated livestock production facility or contaminated manure are listed as likely original sources. The current recall on romaine lettuce is from Salinas, California the same area that recalled E. Coli contaminated spinach nearly 2 years ago. That bacterial strain was also found in the water. My guess is that we will see that contaminated water and/or manure is again the culprit for the current Salmonella problem. I even be bold and predict that this is another antibiotic resistant strain. If I wrong, I be glad so feel free to come back and kick me. So there are several dots to connect here. Intensive production of livestock relies on the constant dosing of low levels of antibiotics. Up to 70% of all antibiotics produced in the US are fed to livestock. So we have an equation with the following variables: Livestock, antibiotics, meat, dairy, eggs, salmonella, e. coli, antibiotic resistance, and fields of fresh vegetables, all sharing groundwater and/or waste materials. I don think it takes a rocket scientist to see where things are going off course in food production. The FDA came very close to actually protecting the public, when it initially tried to ban the use of certain antibiotics in livestock agriculture but the large scale meat production facilities balked and said that they could not run their "farms" without them. Maybe it time for the FDA to realize that its job is to protect consumers from food borne illnesses, and not to pander to corporate agribusiness. Maybe it also time for the EPA to actually do what its name implies: protect the environment (and thus the public) from becoming contaminated with dangerous strains of bacteria. Independent companies could be created to inspect the food production facilities. If the government gets involved it will be a farce. Independent entities would be more likely to be a little more scrutinizing because their reputations would be on the line and, thus, their jobs. Each state or county should then require some sort of certificate or stamp of inspection/quality control. This would help to trace the origins of the food.
